Aam Panna

We always made two different versions of aam panna. One was tangy ,spicy, sweet and sour. Other one is sweet. Both are equally mouth watering and satisfies our taste buds while providing cooling to the body. 

This recipe is for the sweet panna flavoured with saffron and cardamom. The orange color is also imparted by the use of saffron.

Ingredients
Raw mangoes - 2 (I used Rajapuri variety. You can use any which is sour and which had good amount of pulp)
Sugar - 2 cups 
Water 1 cup
Cardamom powder - 2 tsp
Saffron 1 tsp 
Mint leaves a few

Method
1. Pressure cook the raw mangoes with skin for 3 whistles. Take out, cool and remove the puree from the skin and seeds. You can use a spoon to do so.
2. Grind this mango paste to a fine puree along with mint, saffron (kept soaked in hot water) and cardamom
3. In a kadai prepare sugar syrup using 2 cups sugar and 1 cup water. Boil till it reaches 1 string consistency.
4. To the sugar syrup add the mango puree kept ready and bring to a boil for 3 to 4 min. Mix well. 
5. Cool it well and store the concentrate it in a bottle or container. This will stay for a long time.
6. To prepare the drink add one measure of panna mix and top with 3 measures of chilled water. Mix well and serve to enjoy.
