Palak Paneer

Saag paneer is the most delicious green gravy..served with roti, naan, jeera rice / dal. Me and my hubby are in love with this.
 
Ingredients
 
Paneer - 200 gms
Spinach / Palak - 2 small bunches / 1 big bunch
Onion -1 ( finely chopped)
Tomato - 1 ( finely chopped)
Green chilli - 2
Ginger - 1 inch
Garlic - 4/5 pods ( finely chopped)
Tejpatta -1 piece
Jeera - 1 tsp
Haldi - 1 tsp
Hing - 1/2 tsp
Oil - 2 /3 tsp
Ghee / butter - 1/2 tsp
Kasuri methi -1 tsp ( optional)
Salt
 
Method
 
1. Firstly make the spinach puree. For that boil water with salt. Switch off the gas and put in the cleaned and chopped spinach. Keep it covered for 2/3 minutes.  Drain the water and put the spinach in a bowl of ice. This helps retain the green color.
Then puree this with green chilli, ginger and a pod of garlic. Keep aside for later use.
 
2. Next in a pan add oil , jeera and tejpatta. Stir for a minute.  Then add garlic, onion and fry till they are browned (ensure they dont burn) 
 
3.  Add tomatoes.  Cook till soft.  Add haldi and hing.
 
4.  To this mix add the puree made earlier.
 
5. Add salt and water to adjust  thickness.
 
6. Add paneer (either fried light brown or plain)
 
7. Finish off with Kasuri methi.
 
8. Serve hot with roti, naan , dal/ rice.
