Garlic peanut chutney

The first time I tasted this was when a friend got it from Pune. He bought a small packet not being sure if we would like it. It was over in no time. Since then have been trying to lay my hands on a good recipe. Finally got this recipe from my maid.

This in a fantastic accompaniment especially in Maharashtrian meals. Also have tried this with bread butter ...tastes amazing.

Ingredients:


Garlic Cloves 8 to 10
Dry Coconut - 1/2 cup grated 
Roasted Peanuts (groundnuts ) - 3 tsp
Red Chilli Powder - 1 tsp (or can increase as per ur spice requirement) 

Coriander Powder - 1/2 tsp (optional)
Oil , Salt

Method

1) Heat 1 teaspoon oil pan and roast garlic cloves over low flame for 1 minute. Transfer it to a plate

2) Dry roast grated coconut in same pan over low flame until light brown. Transfer it to a plate.

3) Let roasted garlic and roasted coconut cool for 5 minutes.

4) Add roasted peanuts, roasted garlic, red chilli powder, coriander powder and salt in grinder jar or food processor jar.

5) Grind them until medium coarse powder. Taste for salt and add more if required.

Your delicious chutney is ready. Transfer in an airtight container. You can store it for up to 15 days in refrigerator. This can be had with vada pav, missal, all maharastrian foods.
