Ive always wanted to try white rice without any added colours. However also wondered how to get spice and masala in such rice. Finally today i tried a recipe and it turned out superb.
Loved the combination with plain curd. This can also be served with a variety of raitas like pineapple, pomegrate or boondi.
Ingredients
Rice - 1 cup
French beans & carrots - 1 cup
Potato - 1 medium
Onion - 1 big
Tomato - 1big
Garlic - 5-6 cloves
Oil - 2 tbsp
Ghee - 1 tsp
Salt
Sugar - 1 tsp
Garam masala - 1 tsp
Paste of
Coconut scrapped - 1/2 cup
Green chillies - 2 spicy type
Coriander leaves - 1/2 cup
Tadka
Cinnamon - 1"
Cloves - 3
Badishep /saunf - 1 tsp
Bay leaf - 1
Elaichi - 2 (Cardamom)
Method
1) Cut the veggies into fine pieces. Cut the potatoes in small cubes.
2) Make the garlic into coarse paste and keep ready.
3) Make a coarse paste of ingredients mentioned under paste. I made in mortar and pestle.
4) Wash the rice and soak.
5) In a pan add oil and tadka items. Fry for a minute.
6) Add onions , garlic paste and tomato and fry till raw smell goes.
7) Then add veggies with potato and mix well. Add salt , sugar and little water to cook the veggies.
8) When vegetables are partly cooked at the paste of coconut-coriander leaves and green chillies. Mix well and let all cook for 5 minutes. Let the water evaporate.
9) Drain and add the rice , 1tsp ghee and fry well.
10) Add hot water approx two cups and little more , bring to boil and simmer. Close the lid and cook the rice.
11) When almost done add garam masala and close lid. Keep for another 5 minutes.
12) Let the lid be closed for atleast 15-20 minutes before removing, giving a final stir and serving.
