This is a my version of the delicious masala bhaat (rice) which is served in Maharashtrian weddings. In combination with curd and fryems this tastes very good.
Ingredients
Rice - 1 cup (I used Surti kolam )
Tendli - 100 gms(cut in stripes)
Onions - 2 big finely chopped
Coconut - 1/2 cup
Salt as per taste.
For Tadka
Oil - 4 tbsp
Cinnamon - 1"
Cloves - 3/4
Elaichi/Cardamom - 2
Kadipatta -7/8 pieces
Asefoetida - 1 tsp
Mustard seeds - 1 big tsp
Masalas
Goda masala - 2 tbsp
Red chilli powder - 1 tbsp
Tumeric powder - 1 tsp
Method
1) Pre cook the rice upto three fourth and keep to cool.
2) In a pan add oil add tadka items and fry till fragrance comes and mustard seeds pop.
3) Add onions and fry till translucent.
4) Add tendli and coconut , water and cook well.
5) Add the precooked rice and masalas and salt. Mix well but with light hands so that the rice does not become a gluggy mess.
6) Keep on low flame for 5-7 minutes till all mixes well and frangrance starts to spread in the kitchen.
7) We can add cashew nuts also in this.
8) Serve hot with curd and fryems.
