Cream of tomato soup

Tomato soups are made in different versions also can be also made with additions of many vegetables.

Today i decided to make a simple version and served it with a perfect side dish.. grilled potato wedges.

Ingredients

Tomatoes -4
Onion - 1
Bayleaf - 1
Garlic cloves - 2 crushed
Salt as per taste
Sugar depends on taste and tanginess of tomatoes.
Oil or butter - 1 tbsp
Cream - 1 tsp

Method

1) In a pot of boiling water blanch the tomatoes after slitting them into halves. Blanch till skin starts coming off. Drain and let it cool.

2) In a pan add butter melt and then bayleaf, garlic and onion. Let it sweat a little.

3) Then add salt and sugar and fry the onions till they caramalise a little.

4) Remove the skin from the tomatoes and put along with onions.

5) Take out the bayleaf and put all the ingredients in a blender.

6) Blend into a fine puree , add water as needed.

7) Pass thru a strainer and put in pan and let it boil once more. Adjust seasoning.

8) Serve hot topped with cream.
