Theekha sev and Omapodi

Spicy sev or strands of gram flour. This is an easy yet delicious snack and can be made very easily.

I have made this for diwali. Half batch of besan / gram flour paste I made with ajwain /oman / carrom seeds. Remaining half i made with only red chilli powder.

Ingredients

Besan / gram flour - 1&1/2 cups
Rice - 2 tbsp
Red chilli powder - 2/3 tbsp
Hing/asefoetida - a big pinch
Tumeric powder - 1 tsp
Salt to taste
Ajwain - 2 tbsp
Baking soda - a pinch
Oil - 1 tbsp (warm)
Oil for frying

Method

1) Firstly soak ajwain in warm water for half hour. Then grind it and extract the juice. This water is to be used for the portion of paste which is to be used to make omapodi.

2) Add chilli powder, salt, hing, tumeric powder to besan and mix well.

3) Now make two halfs of the mix.

4) Add warm oil to both portions and mix

5) One half put ajwain extract and little by little water and make the paste.

6) Also for the second half add water little by little and make the paste.

7) The mix should not be too watery or very hard or else will not be able to make the sev.

8) Now put the mix in the chakli/sev maker using the appropriate nazhi in the maker and use for making directly into the oil.

9) Let it fry on medium flame on both sides. See not to keep the flame too high or else burnt taste will come in sev.
