This is one dish which is loved by most people. Preferably made in the winter season because you get the red carrots which is more tastier then the orange carrots.
I made a simplified and not very rich version using low fat milk. Simplified as instead of grating the carrots i pulsed it in the mixer to make a fine grate.
So the simple yet yummy recipe.
Ingredients
Red carrots - 1/2 kg
Low fat (Amul taaza) - 1/2 litre
Sugar - 7-8 tbsp
Cardamom pods crushed - 7-8 pods
Dry fruits - 1/2 cup mixed (cashew, pista,charoli)
Ghee - 2 tbsp
Method
1) I cut the carrots into medium cubes and pulsed it in the mixer. Gave me a fine grated mix.
2) Add ghee and put the carrots and fry for some time.
3) Put in half litre boiled milk. Mix well and cook till half milk is absorbed.
4) Then add the sugar and mix well.
5) Keep on medium flame with cover on till 95% milk is absorbed.**
6) Lastly add the dry fruits and cardamom powder. **
7) Let all the milk get absorbed and form a mix which starts leaving the sides of the pan.
8) The halwa is ready to be served hot with dry fruits on top for garnish.
**Notes
a) At the stage when most milk is absorbed you can add slightly pan fried khoya to make this more richer.
b) Dry fruits can be added as per your choice... Almonds, kismis and others can be included.
