Zafrani masala pulav.

My search to make a different kind of recipe bought me to make a combination of masala plus zafrani pulav items.

The classic dish uses saffron to create a nice golden yellow color to the rice that gives an appealing visual appearance to the dish.  This dish is made from basmati rice, saffron strands, butter and whole spices and herbs. Masala pulav i normally use various vegetables , ginger garlic paste and spices. So combined both recipes. Added dry fruits to make it rich.

Ingredients
Basmati rice - 1 cup (wash and drain)
Saffron - 1 tsp ( soaked in warm water or milk)
Potatoes - 2 (cut in big cubes)
Peas - 1 cup
Carrots - 1/2 cup (small pieces)
Onions - 4 small ( finely chopped)
Ginger garlic paste - 2 tbsp
Cloves - 3
Cinnamon - 1"
Bayleaf - 2 small
Dry fruits - Almonds, pista, walnuts, pine nuts, kismis, dried peach.
Masalas
Garam masala - 1/2 tsp
Red chilli powder - 1 tsp
Tumeric powder - 1 tsp
Salt
Oil - 4 tbsp (can use butter for better taste)
Coriander leaves and mint leaves for garnish.

Method
1) In a pan add butter / ghee/ oil and heat. Add whole spices and fry.
2) Add garlic , ginger paste cook and then onions. Fry till translucent
3) Add dry fruits fry for some time.
4) Add vegetables and let it cook for some time.
5) In the meanwhile wash and drain the rice and keep ready.
6) Once the veggies are partly cooked and water is evaporated, add the rice and fry for some time till the frangrance comes.
7) Add masalas , salt and water as required.
8) When it comes to the boil add the saffron and let this all together impart a fantastic flavour and smell to the rice.
9) Cover with the lid and let it cook.
10) Wash a bunch of coriander and mint leaves , chop and add as a garnish.
11) Can use fried dry fruits as garnish also.
