Vella dosai is a sweet variety of dosa made especially for days of fasting where rice items are avoided. In South India unlike other parts of India where different types of flour like rajgira/amaranth or sabudana are used on fasting days, we eat wheat.
For Mahashivratri for which this dosa is made in my house we keep a salt free fast. No items consumed contain salt. Mostly only milk, fruits , vella dosai and parupa kanji (dal sweet) is consumed on this day.
Now for the very simple recipe I followed to make this dosai.
Ingredients
Jaggery/Gur/ Vellam - 1 cup
Water -2/3 cups
Wheat Flour - 1 cups or more
Coconut scraped or cut in fine pieces - 2 tsp
Cardamom powder
Ghee for frying.
Method
1) In water add grated jaggery and let it rest for some time. Keep stirring in between.
2) Once the full jaggery is mixed with water strain this liquid for impurities. (This step can be also be done as follows. Add the jaggery to water and let it simmer for some time. The whole jaggery will get mixed with water and then can be strained.)
3) Take the wheat flour in a vessel and add the jaggery water little by little and mix so that it forms a batter without lumps. This is one of the most important steps.
4) Then add cardamom powder and coconut. Mix well. The batter should be thick like uttapa batter not watery and runny.
5) In a flat pan add ghee and heat up a little.
6) Pour the batter from the sides to inside. This will not be a very flowy batter nor can u spread it like dosa. Also it will stick to the tava if u try to spread around.
7) Now the most important step of letting this cook on a medium flame. I covered it with a lid to facilitate cooking. Let one side cook well then only try to flip it over. If it is not cooked the dosa will get crumbled and break at this point.
8) Once successful flipped let it cook on the other side as well on medium flame.
Do not increase the flame as this dosa will get burn fast.
9) Remove from pan and let it sit for a minute before you serve it with fresh butter.
10) Add more ghee on the pan before making the next dosai.
