South Indians favourite rice. Always loved it when mom used to make. Tried it with healthy brown rice.
Brown rice - 1cup cooked and kept
Coconut - 1/2 -3/4 cup
Mustard seeds - 1 tsp
Methi seeds - 1/4 tsp
Udit dal - 1 tsp
Chana dal - 1 tbsp (soaked)
Kadipatta - 8-10 sprigs
Dry Red chilli - 2
Green chillies - 2
Coconut oil - 2 tbsp
Salt to taste
Method
1) Cook the brown rice and keep to cool.
2) In a pan add oil heat and add mustard seeds , then methi seeds, green chillies,chana dal and udit dal fry for some time till mustard splutters and dals get golden brown.
Then add red chilli and kadi patta and fry.
3) Add coconut and fry till golden brown. 4) Add rice and salt and mix well.
5) Serve hot.
