Mango phirni


Phirni to me is a delicious thick sweet treat of thick rice cooked in milk. Its normally served in mud pots which lend it a flavour of its own.

Today i decided to add mango to it to add to the taste.

Ingredients
Rice - 5 tbsp
Milk - 1/2 litre
Sugar - 4-5 tbsp or as per sweetness
Mango puree of one small mango
Cardamom powder - 1 tsp

Method
1) Soak the rice for about half an hour to 45 min. Grind with little water to break the rice in small grains.
2) Boil the milk. Put the rice paste and milk in a broad pan and cook well.
3) Once the rice gets cooked add sugar and mix well.
4) Switch off the flame and let it cool. Your basic phirni is ready.
5) In a mixer add the mango pieces , a tsp of sugar and cardamom powder. Make a puree. If using tinned puree can avoid this step.
6) Once the phirni has cooled add the mango puree. Put this in bowls to set.
7) Serve chilled.
