The perfect combination to any dosa is with chutney and sambar. However sambar ingredients are not always handy or you may get bored to cook the dal, then tamarind pulp.. Etc etc.
So checked around a few recipes online and in my group Recipes of Palakkad and made my own addition and voila super dish is ready.
Ingredients
To grind:
Coconut grated - 1 tbsp
Tomato - 1
Fried gram/Pottukadalai - 1 tbsp
Sambar powder - 1&1/2 tbsp
Tumeric powder - 1/2 tsp
Veggies:
Onion - 1 very finely chopped
Flower, potato - 1/2 cup boiled
Tomato - 1/4 piece
Others:
Salt to taste
Jaggery - 1/2 tsp (optional)
Mustard seeds- 1/2 tsp
Fenugreek seeds /methi - 1/4 tsp
Asefoetida/hing - a pinch.
Method:
1) Make a paste of ingredients mentioned under to grind.
2) Heat oil in a pan, add methi and mustard seeds. When it splutters add onion fry till translucent.
3)Then add boiled flower, potato and tomato and fry for 2 minutes.
4) Add the ground paste and salt. Add little water keep it simmer for 5 minutes.
5)Check for taste, adjust if necessary.
6) Garnish with coriander leaves & curry leaves
