Sabudana vada

Sabudana or sago pearls is used by Gujrati and Maharashtrian people for fasting. So many varieties are with sabudana. One very tasty option is this vada.

Ingredients
Sabudana - 1 cup
Boiled potatoes - 1
Senghdana powder - 2 tbsp
Green chillies - 2 finely chopped
Sugar - 1 tsp
Salt to taste

Method
1) Soak the sabudana in extra water for 7-8 hours so that it soaks in all the water and becomes slightly mushy
2) In this add boiled potatoes, senghdana powder, green chillies, salt and sugar..
3) With your hands mash all the ingredients well. Check for salt and spice.
4) Make small balls and fry in oil. The oil should be cover the sabudana balls completely.
5) The oil should not be too hot the vada will be brown outside and not cook.Cook on medium first so it cooks inside and then slightly high so outside can get crisp.
6) Serve with coriander-groundnut chutney and sweet dahi.
