Bruschetta the Indian way

An international favorite which we love in our house.

International ingredients are not always available in our markets . However we always have our some of our local ingredients to replace. So did that along with some that I had locally sourced. Some tips from friends and voila delicious bruschettas are ready.

Ingredients.
Marinate for half hour -
Onions-1
Tomatoes-2
Sun-dried tomatoes - 3/4 pieces
Olives - 5
Garlic cloves - 4/5
Coriander leaves - a handful.
Vinegar - 1 tbsp
Sugar - 1 tbsp
Pepper powder - 1 tsp
Dried herbs(pizza mix) - 2 tbsp
Red chilly flakes - 1 tbsp
Salt as per taste
Olive oil - 2 tbsp
French baguette bread - 2 loaves.

Method
1. Soak the Sun-dried tomatoes in hot water to soften and plump up.
2. Finely cut all the veggies and garlic. Clean the coriander leaves and keep ready.
3. Mix together tomatoes, Sun-dried tomatoes, onion, garlic, coriander leaves with vinegar, sugar , salt, herbs, red chilli flakes, olive oil & pepper powder. Adjust the seasoning as per your taste.
4. Let it marinate for about half an hour.
5. In a mixer run two cloves of garlic, salt along with olive oil. If you have preplanned you can let the garlic rest in the olive oil. This gives a good flavour while sprinkling on the bread used for making bruschetta.
6.  Cut the French bread side ways so we get a long cut. Grill toast in microwave for 3-4 minutes on each side.
7. Remove and sprinkle little garlic olive oil on this. This will soften the bread in the centre lil but with the sides being crisp it gives a nice contrast.
8. Top this with the marinated veggies. Serve hot.

Note:
*You can add toppings like feta cheese, Parmesan cheese, capsicum or other veggies.
*The Sun-dried tomatoes, olives are bottled preserved ones available in Indian markets. They need to washed and then used.
*Herbs are dried herbs available as pizza mixes or separately available. If you can source fresh ones like basil the taste will be enhanced.
