Layered semolina cake

A traditional recipe with a twist. Layered semolina/rava cake created with a recipe which I've previously shared in my blog of rava cake. Included mango in one of the layers and chocolate shavings on top .. a diet recipe of sorts as it's baked , made with raw sugar (can add jaggery) not much fats included.
 
It is an absolute hit with all age groups

Ingredients

1 cup roasted medium coarse rava 
1 cup yogurt 
2/3 cup sugar + 1-2 tbsp sugar depending on your taste(I used raw sugar)
3 tbsp ghee

1/2 cup thick mango puree

1/2 cup mango pieces.
1/4 teaspoon baking soda
1 tbsp cardamom powder 
1-2 tsp milk (if needed)
Saffron for garnishing

Method

1) In two bowls, add half each rava, yogurt and sugar and mix gently. In one of the bowls add the mango puree. Add softened(liquid) ghee and mix everything until batter is formed in each bowl. This batter has to be thick as after resting the sugar may also become little watery. 
2) Let these rest for 30 minutes to an hour. 
3) Pre-heat oven to 350 degrees / 180 degree Celsius.
4) Add baking soda, cardamom powder in each bowl.
5) Add mango pieces in the bowl that has mango puree mix. If you feel the batter is too thick can add little milk to loosen it up.
6) Line your cake pan with parchment paper and gently grease it with a few drop of ghee. 
7) Pour the white batter evenly into it. Tap the baking pan a few times on the counter, this will help spread the batter.
8) Then pour the mango batter on top and spread lightly so it does not get mixed with the earlier layer.  
9) Sprinkle some saffron strands on top.
10) Bake in Microwave on convection mode for about 22-25 minutes@160. It may be soggy while it’s hot. 
11) Crank up the temperature to 180 degree and bake for another 10-12. This will give a golden brown crust on top. 
12) Let it cool completely before you cut it into pieces.
13) Scrape chocolate on top
