Pitla (besan based)

Zunka bhakar / Pitla bhakri are favorite combinations in rural Maharashtrians. In urban areas this is now available at Zunka bhakar stalls at cheap rates under the government schemes for poor.

At Maharashtrian homes the combination of Pitla with bhakri is considered easy to make yet healthy combo esp since bhakri with this is normally made of jowar or bhajra. Only Pitla can be had with chapati also.

Ingredients
Onion - 1 finely chopped
Garlic - 7/8 crushed.
Besan -  4/5 tsp(slightly roasted)
Water , salt to taste
Kasuri methi - 1tbsp crushed
Green chillies - 2 split

Method
1) In a pan add oil put mustard seeds and jeera , green chillies , then add garlic fry till golden brown. 
2) Then add onions and cook till soft.
3) In the meanwhile add water to the besan (kadala mav) and make a mix which will be watery. The besan thickens when heated.
4) When onion cooks add salt and besan mix. Let is cook for about 10 min til the raw smell of besan goes. Keep adding water. The consistency should be like dosa atta/custard.
5)Add kasuri methi give a final stir and switch off the flame.
6) Serve hot with bhakri
