Cashew Peas pulav



My husband and me are big foodies.  A weekly or fortnightly visit to restaurant is on the cards to try out different cuisines. ..be it Mughlai, Punjabi, South india, Gujrati,  Indianised or authentic Chinese. 

The one cuisine or dish which stands out for me is rice be it pulav, biryani, fried rice, mexican rice. A simple veg pulav , peas pulav , paneer pulav (being my favorite) tops the list. I could have any of these just as is no side dishes really required. 

The length of the rice, the fragrance of the simple whole masalas used the freshness of ingredients used all adding flavour and most importantly serve it hot ..would love to say with a smile😉 but that would sound cheeky.

Today decided to try cashew peas pulav at home and served it with a smile😊. It is simple yet delicious and easy to replicate that I'm sure I'm going to make this more often at home and skip having it at restaurants.

Ingredients
Basmati rice - 1 cup
Peas - 1 cup
Cashews - 10-15 pieces
Cardamom - 2
Cinnamon - 1 "  piece
Cloves - 2
Onion - 1 big cut in strips
Green chillies - 4 in big pieces
Rajwadi garam masala - 1 tsp
Salt to taste
Sugar - 1 tsp
Oil - 1 tsp
Ghee - 2 tbsps

Method
1) In a deep vessel boil water add salt, cardamom, cinnamon, cloves then rice and peas. Cook till 3/4 done.
2) In a pan heat ghee, then add onions, green chillies and cashew. Top with sugar and salt and fry till onions become golden not very brown. Add the garam masala also along with this.
3) Mix the cooked rice and give a good stir but with light hands without making the rice mushy.
4) Serve hot with curd or raita or plain with papad.
