Ingredients
Besan - 1&1/4 cup
Rice flour - 2 tbsp
Coriander leaves - 3/4 cup finely chopped
White til - 1 tbsp roasted
Peanuts - 2 tbsp roasted, pealed and ground to coarse powder
Lemon juice - 1 tbsp
Oil - 1 tbsp
Ginger - 1 inch piece grated (or 1 tsp ginger paste)
Garlic - 3pods
Green chilli - 5
Turmeric powder - 1/4 tsp
Salt - 1/3 teaspoon (or to taste)
Garam masala - 1/4 tsp
Baking soda/eno - 1 tsp
Oil - to fry
Method
a) Clean the coriander leaves and cut finely.
b) Make a coarse paste of ginger, garlic and chillies.
c) Roast the peanuts , peel and grind into coarse powder.
d) In a large vessel add the flour first, then mix rice flour, add water little by little and form a smooth thick batter like it is made for bhajiyas.
e)In the batter add all ingredients ginger-garlic-chutney paste, peanuts, til, salt, coriander leaves,garam masala, tumeric powder, salt, oil. Mix well.
f) Just before steaming add eno and give it a good stir. Then rest for a minute to fluff up.
g) Pour in the greased steamer pan and keep it to steam for a good 15-20 minutes.
h) Then switch off the gas and let it cool down.
I) Cut it into cubes and shallow fry in a pan. Serve hot with chutney and sauce.
