Aam panna


Khatta meetha a lil spicy, a lil sweet, tangy and mouthwatering. All this is best described by this recipe. An old recipe by mom which she made every year with raw mangoes from our own garden..spruced it up a bit to lower the efforts of making it and voila ready in less time with same delicious taste.

My mom would scrape the mangoes and cook it down in sugar syrup. The effort was too much to think of. Seeing some new method of steaming the mangoes to get tje pulp seemed much easier and I followed that method. Was so much faster too, then cooking it with sugar and required spices made the pulp / mix ready.

Ingredients
Raw mangoes - 2 (I used Rajapuri variety. You can use any which is sour and which had good amount of pulp)
Sugar - 2 cups *
Water 1 cup
Roasted jeera powder - 1tsp
Cardamom powder - 2 tsp
Red chilli powder -1/2 tsp
Kala namak - 1 tsp
Normal salt - 1tsp
Pepper powder - 1 tsp
Mint leaves - 1 cup *

Method
1. Pressure cook the raw mangoes with skin for 3 whistles. Take out, cool and remove the puree from the skin and seeds. You can use a spoon to do so.



2. Grind this mango paste to a fine puree along with mint, roasted jeera powder, pepper powder, red chilly powder, cardamom powder, salt and kala namak.
3. On the other hand prepare sugar syrup using 2 cups sugar and 1 cup water. Boil till it reaches 1 string consistency.
4. To the sugar syrup add this mango puree kept reat  and bring to a boil for 3 to 4 min. Mix well. 




5. Cool it well and store the concentrate it in a bottle or container. This will stay for a long time.
6. For having aam panna juice take 2 to 3 tbps in a blender add cold water and blend well. Can add extra lime juice or jeera powder or sugar if needed.

Notes*
1 . Use 1 cup sugar or more if u like it very sweet for each big raw mango used
2. Mint leaves gives a good flavour addition and also a subtle green color. You can avoid if you don't like or use a drop of green edible color.
