Spicy delicious goodness of paneer always lifts my mood. Paneer bhurji is the old normal adding a lot more veggies like corn and mutter makes it more delicious. A dish born out of my imagination of flavours and I'm happy I got on plate what I imagined it to be.
A little elaborate preparation and making but does taste quite delicious
Ingredients
Paneer 200 gm
Corn 50 gm
Peas 50 gm
Onion 2 medium
Tomato 1 big
Ginger 2 inches or a big chunk
Garlic 10-12 cloves
Green chilly - 2(non spicy variety)
Curd 1 tbsp
Ghee 1 tbsp
Oil 1 tbsp
Masalas
Red chilli powder 2 tsp or can increase if u like spice
Tumeric powder 1 tsp
Kitchen king masala 1 tsp
Garam masala 1 tbsp
Kasuri methi 1 tbsp
Method
1) Pan grill the paneer for a smoky flavour . Boil the corn and peas in some water and keep ready. Cool it , crush the mutter and corn in mixer and keep ready. Also mash the grilled paneer and keep ready.
2) In a pan add oil plus ghee then jeera , ginger garlic paste and finely sliced green chillies. Let the fry till raw smell goes.
3) Add onions , little salt and fry till onions turned golden brown. Then add tomatoes and cook till all get mashed together.
4) Put in all the dry masalas except garam masala and kasuri methi. After a mix add a little water and curd ..let this cook for a while till oil is released.
5) Add the paneer, mutter and peas crush to this gravy , add little water and mix well.
6) Check and adjust spices at this point. Add garam masala and kasuri methi crushed. Mix well together.
7) Garnish with coriander leaves, onion slices, tomato slices and lime.
8) Can be had with toasted bread, chapati or dal rice.
