Lapsi salad

Salads I love but as a side dish. Like maybe part of pasta , garlic bread combo or even with a pizza. However always wondered how  person could have only a salad and not be hungry later.

Now this salad is guaranteed to fill your stomach and your hearts. No going hungry any longer.

Ingredients

Lapsi - 1 cup
Water - 2 cups
Onions - 1 small ( finely chopped)
Tomato - 1 small ( finely chopped)
Capsicum - 1 small ( finely chopped)
Paneer - 50 gms crumbled
Dry roasted crushed nuts - 1 tsp ( almonds,  walnuts , pistachios,  pine nuts)

Dressing

Olive Oil - 2 tbsp
Garlic crushed - 1 tsp
Red chilli flakes - 1 tsp
Lime juice - 1 tsp
Salt

Method

1. Wash , clean and pressure cook the lapsi with a pinch of salt. Just one whistle. Take out drain excess water and let it cool

2. Mix all veggies , paneer and nuts  in a bowl

3.  Mix the dressing , stir it well

4.  Combine all ingredients with the dressing.  Garnish with some coriander.

5.  Enjoy. You can team it up with your favorite soup.

Notes

** Couscous or quineo can be used in place of lapsi.

  Can also use sprouts in this salad
