Baigan Aloo Masala

Aloo - 3 big (cut in chunks)
Baigan - 4 small
Oil - 4 tbsp
Jeera - 1tsp
Hing - 1/2 tsp

Stuffing
Peanut powder - 2 tbsp
Roasted til powder - 1 tbsp
Coconut scrapped - 1/2 cup
Kothmir - 1/2 cup
Dhania powder - 1 tsp
Jeera powder - 1tsp
Red chilli powder - 1 tsp
Garam masala - 1tsp
Haldi - 1/2 tsp
Salt , sugar

Method

1.  Mix the ingredients of stuffing well

2.  Stuff in slit baigan

3.  In a pan add oil , then jeera and hing. Then place baigan.  Then layer aloo chunks and top with filling.

4. Add little water and let it cook.
