Dudhi/ bottle gourd ki sabzi




When I go shopping for vegetables the first one that would come to mind would be doodhi. The soft flesh is really packed with a lot of health benefits like cooling the body , aiding in weight loss to name some. 

Doodhi juice is rich in Vitamin C, Vitamin B, sodium, iron and potassium and works as an anti-oxidant that could help the health conscious lot.

For many a years this has been my favorite go to veggie .. I have even replaced many a potato recipes to include or replace with doodhi and believe me the hubby has not been able to make out the difference. 

I have a heard how this is not a favorite of many people or even that some kids refuse to eat this. I do get surprised to say the least because I personally would reserve those reactions to a bitter gourd aka karela or the slimy eggplant. 

Moving on to this simple yet delicious recipe. 

Dudhi - 500gm (cut in small pieces)
Aloo - 2 (cut in small pieces)
Onion - 1 (finely chopped)
Tomato - 1 (finely chopped)
Garlic -3/4 pods (crushed)
Coriander powder - 1tsp
Jeera - 1/2 tsp
Red chilli powder - 1 tsp or as per taste
Garam masala - 1/2 tsp
Haldi - 1/2 tsp
Oil
Salt , sugar (as per taste)
Coriander for garnish

Method

1)  In pan put oil , add garlic and onion ..fry till onion is translucent

2)  Add tomato and fry for a minute

3)  Then add dudhi and aloo. Add haldi and water . Let it cook

4)  Once cooked put all masala & salt, sugar. Mix well.

5) Serve hot garnished with coriander.
