Brinjals - 3 (slit)*
Potatoes - 3 (cut in fours)
Onion - 2 (finely chopped)
Oil - 3 tbsp
Jeera - 1tsp
Hing - 1/2 tsp
For stuffing
Onion - 1 (finely chopped)
Coconut - 1/2 cup grated
Peanut powder - 2 tbsps
Roasted til powder - 1 tbsp
Coriander powder - 1 tbsp
Jeera powder - 1 tsp
Red chilli powder - 1 tsp
Saunf powder - 1 tbsp
Tumeric powder - 1tsp
Salt
Method
1) In a pan put oil , jeera and hing. Then add onions fry till translucent.
2) Put potatoes, let it cook for a while. Add a little water.
3) When 3/4 done add the stuffed brinjals.
4) Mix well , add a little more oil (if u like it to float on top).
5) Keep it on flame will cooked well . (Brinjals cook well)
6) Top with ghee 1 tsp.
Serve hot with chapati or rice - dal.
* Brinjal is slit length wise from both ends in cross section till a little before the tip.
