Mixed Vegetable Soup


This soup has a very creamy texture without adding any cream or thickening agent. It is very good for people who want to diet and avoid fats.

Ingredients  
For base
Mixed vegetables carrot,cabbage, onion, tomato, beetroot, doodhi all finely cut - 2 bowls
Ginger paste - 1 tsp
Green chillies - 2 finely chopped
Soya sauce - 2 tsp
Green chilli sauce - 1 tsp
Butter - 1/2 tsp
Water - 2 bowls

For soup
Carrot, cabbage , paneer finely cut - 1/2 bowl
Salt as per taste (first check taste and then add since soya sauce already has salt)
Sugar - 1 tsp
Water - to adjust thickness

Procedure

1) In a pan add butter and add all veggies. Fry on low flame for 5-7 minutes
2) Add water, ginger paste, green chillies and cook for 10-15 minutes or till veggies are soft.
3) Then drain and make a puree. Add green chillies sauce,soya sauce, sugar, salt and make a smooth puree. This forms the base of the soup
4) In the same pan add cabbage , carrot and paneer finely chopped and dry roast for 2 minutes.
5) Add the veggies puree. Add water if needed. Bring to boil
6) Serve garnished with coriander leaves.
