Palak curd soup

The soup and ingredients used are for diet. In case anyone not dieting wishes to make this they can add cream or milk to add taste.

The below items will serve 1 person.

Ingredients
Spinach - 2 cups including soft stems
Onion - 1small chopped
Garlic cloves - 3 minced
Curd - 1 tbsp
Ginger chilli paste - 1 tsp
Salt, Sugar
Butter - 1/2 tsp ( can be replaced with olive oil)
Pepper for flavouring

Method
1) In a pan add butter let it melt. Add garlic and onion. Let it become brownish

2) Then add the spinach and roast well on low flame. This helps to maintain color.

3) Add ginger chilli paste and little water , salt , sugar and cook the spinach.

4) After about 5 -7 minutes switch off the flame and let this mix cool down completely.

5) Blend the mix in a mixer with curd.

6) Strain the mix through a sieve.

7) Put the puree back on very low flame and let it become hot. Dont let it boil as the curd will split.

8) Serve hot with a dash of pepper.
