Patra / Alu vadi

This recipe is given by my mum . My mother in law too makes but a different set of ingredients for the filling. Shall make a different post for that recipe

Now for my mums recipe

Ingredients
Alu leaves - 7 (Colocasia leaves)

To make a paste
Besan - 6 tbsp
Jowar flour - 2 tbsp
Rice flour - 2 tbsp
Tamarind - a big lemon ball - soaked in hot water
Jaggery - 1 tbsp
Red chilli powder - 3 tsp
Hing - 1 tsp
Corainder powder - 2 tsp
Cumin powder - 1 tsp
Goda masala - 1 tsp
Salt.

Method

1) First cut the stem and clean the alu leaves well and wipe and keep ready.

2) Add all ingredients to make a paste and make nice gooey paste. Not too watery not too thick. Such that you can spread with your hands.

3) Place the alu leaves with the back part facing up and start spreading the paste on it. Dont apply too much put a thin layer.

4) Then place the next leaf on this and apply the paste.

5) In a similar manner you can add three max four leaves.

6) Then start rolling this. First roll thr sides in and then start rolling from the top end tightly and spread a little more paste as you roll. At the end of the tip you can fix with toothpick or tie a rope.

7) Steam this for 15 / 20 minutes.

8) Take out let it fully cool before you cut the pieces and dry roast on pan.

9) Garnish with roasted till and coriander leaves.

Notes

- The steamed cooled cut rolls can also be deep fried
- Using coconut scrapped for garnish also enhances the taste.
