Vangyache kaap / Fried eggplant.

As I mentioned in the post on Baigan la bharta only two versions of eggplant dishes I like. This is one of them.

Love the crispy fried simple dish.

Ingredients
Eggplant / baigan slices - 4 (Dipped in water till ready to use.)
Salt - as per taste
Tumeric powder- 1tsp
Red chilli powder- 2 tsp
Hing - 1/2 tsp
Oil - for pan frying
For coating
Rice flour - 1 tsp
Semolina / rava - 1 tsp

Method

1) First remove and dry the slices of eggplant/ baigan.

2) Apply salt, tumeric powder , red chilli powder and hing and rub it well and let it rest for 5 minutes.

3) Take the rice flour and semolina in a bowl , dust it over the marinated slices.

4) Pan fry till crispy and golden brown.

Enjoy with chapati or dal rice.
