Aloo mutter undhiyo style

Undhiyo is a favorite with all gujrati households. However making the full version is very difficult and huge quantity everytime doesn't get eaten up.

So made a small quantity with potatoes and peas.

Ingredients
Potatoes - 2 (cubed)
Peas - 1 cup
Coconut - 2 tbsp
Onion - 2 big (finely chopped)
Garlic - 4-5 pods (crushed)
Coriander leaves - 1 cup (fineluy chopped)
Ajwain - 1 tsp
Hing - 1/2 tsp
Red chilli powder - 1 tbsp or as per spice needed.
Tumeric powder -1/2 tsp

Method

1) Boil the peas and potatoes separately and keep.
2) In a pan add oil put ajwain (omam) and hing.
3) Add onion, garlic crushed and fry on low flame till translucent.
4) Add coconut and continue frying.
5) Add coriander leaves and salt and mix all together.
6) Put the boiled peas and potatoes, red chilli powder and little water.
Mix well and let it cook for another 5 minutes.

Notes:
The red chilli powder can be replaced with green chillies.

Instead of normal garlic would be better to use fresh garlic (green one)
