Mango kesari

Since the beginning of summer wanted to get this kesari made. However the mangoes kept going from box to plate and straight to stomach. Didnt reach the kitchen platform to make recipe.
Another reason i make sheera often and not kesari is because this is much more richer.

Finally today decided to make it.

Ingredients
Rava - 1 cup
Water - 1 cup
Mango puree - 1.5 cup
Sugar - 2 cups (i used brown sugar)
Ghee - 1/2 cup
Cardamom powder - 1 tbsp
Cashew nuts for decoration

Method
1) In a deep vessel add water, mango puree, sugar and mix well. Keep on flame and bring to a boil. Keep stirring so it doesn't stick to the bottom.
2) In a broad pan add ghee and roast the rava. Roast it well till golden brown.
3) When the pan is hot add the boiled sugar, water, puree mix and give a good stir. Be careful as at this stage it starts to boil.
4) Cover the pan and keep for 10-15 minutes. Check, add the cardamom powder and give one more stir. Then cover and keep on low flame.
5) It should be done in another 5-7 minutes. Switch off gas and keep closed for some time.
6) Roast the cashew in some ghee and garnish
