A popular street snack in mumbai each vendor would have some variations of his own. The regular veggies used are beans , carrot, capsicum, peas, cauliflower, potato. You can try any other veggies like broccoli, doodhi. Paneer, cheese can be added as garnish and make this more yummy.
We love this slightly thicker than what it is normally served so prefer making it at home.
Ingredients
Carrot-1/2 cup
Capsicum-1/2 cup
Beans- 1/2 cup
Peas -1/2 cup
Potatoes -1 big
Onion -2
Tomatoes -2
Ginger garlic paste -1 tbsp
Red chilli powder - 1 tsp
Pav bhaji masala - 1 tbsp
Tumeric powder -1/2 tsp
Jeera -1/4 tsp
Salt to taste
Lime and coriander leaves to garnish
Method
1) Put veggies carrot, beans, capsicum , peas and potatoes with little water and tumeric powder to pressure cook for about 2 /3 whistles. Take out and mash well.
2) Make a paste of ginger, garlic and part onions
3) In a pan add oil , heat up and little jeera. Then add onions finely sliced and fry for a minute. Then add the ginger garlic onion paste and salt fry till raw smell goes.
4) Make tomato and pav bhaji masala plus red chillies powder puree. Add this to the onions masala in the pan along with a tsp of butter and mix everything. Fry for about 5-7 minutes till oil comes out on the sides. This is the base of delicious pav bhaji.
5) Add the mashed vegetables to the above and mix well. Put a little water adjust salt and spice and give one good boil.
6) Serve hot garnished with butter toasted pav , onion, tomato, coriander leaves and butter.
