As soon as the first raw mango.. especially totapuri variety even if it's a little ripe is good.. this pickle is made in my house. I can have it with almost everything..dosa, idli, curd rice, plain curd. My meal would be complete with just curd rice and this pickle. .. no other additions needed.
Making it is quite easy. I sometimes don't even take out the skin..you could if you wish scrape it out. Cut it finely ..smaller bits are easier to chew on. Lastly this is a no cook required pickle.. just upar se tadka and crunchy pickle is ready
Ingredients
Raw mango 2
Oil for tadka - 1 cup
2 tsp mustard seeds
1 tsp asefoetida / hing
1 tsp tumeric powder /haldi
2 tbsp red chilly powder *
Method
1) Cut the mangoes into small tiny pieces.
2) Mix in the salt, tumeric powder and red chilly powder
3) In a tadka pan heat oil and add mustard seeds and hing. Switch of the gas and let this cool a bit.
4) Add the cooled tadka and mix well.
This can be bottled and refrigerated. Stays fresh for a week.
*We use a masala mix my mom makes named menthiya mulgapodi in place of red chilly powder. This is a mix of red chilly, mustard seeds and fenugreek seeds. Will share it another blog post
